Peach and Mango Salad Recipe

Peach and Mango Salad
Colourful summer fruits dominate in this delectable, juicy salad.
Serves 4.
Prep Time: 15 minutes.
Cooking Time: 5 minutes.
Ingredients
- 2 large Kensington Pride mangoes, thickly sliced
- 3 peaches, cut into wedges
- 1 bunch asparagus, sliced in half
- Spray oil
- 120g pkt baby rocket
- 175g Romatherapy® baby roma tomatoes, quartered
- 175g pkt Vine Sweet Minicaps® baby capsicums, sliced
- 1/2 cup roasted macadamia nuts, roughly chopped
- Italian dressing
- 1/2 cup shaved parmesan cheese
Cooking Instructions
- Heat BBQ grill or chargrill pan on medium.
- Spray oil onto mangoes, peaches and asparagus.
- Cook mango and peaches for 30 seconds to 1 minute or until surfaces are lightly browned and slightly softened. Cook asparagus for 1-2 minutes.
- Toss lightly together with baby rocket, tomatoes, Vine Sweet Minicaps® baby capsicums, macadamia nuts, and dressing.
- Scatter top with parmesan cheese.
