Prawn Mango and Avocado Salad
Summery and light, this tasty salad is quintessentially Australian!
Serves 4.
Prep Time: 15 minutes.
Cooking TIme: 5 minutes.
Ingredients
- 250g Romatherapy® baby roma tomatoes, sliced
- 2 large Kensington Pride mangoes, sliced
- 1 avocado, sliced
- 100g packet mixed salad
- 1kg medium green king prawns, peeled, deveined
- 1 tbsp lemon pepper seasoning
- 5-6 slices prosciutto
- Spray oil
- French or Italian dressing
- Chives, to garnish
Cooking Instructions
- Preheat grill pan or BBQ on medium heat.
- Coat prawns in lemon pepper seasoning. Spray prawns lightly with spray oil and cook on BBQ grill plate for 2-3 minutes or until prawns are just cooked.
- Remove from heat and cook prosciutto 1 minute each side or until golden. Remove from heat and when cool enough roughly tear into pieces.
- Toss salad mix, tomatoes, mango, avocado and prawns with salad dressing. Garnish with chives.
