Prawn Mango and Avocado Salad

Prawn Mango and Avocado Salad

 

Summery and light, this tasty salad is quintessentially Australian!

 

Serves 4.
Prep Time: 15 minutes.
Cooking TIme: 5 minutes.

 

Ingredients

  • 250g Romatherapy®  baby roma tomatoes, sliced
  • 2 large Kensington Pride mangoes, sliced
  • 1 avocado, sliced
  • 100g packet mixed salad
  • 1kg medium green king prawns, peeled, deveined
  • 1 tbsp lemon pepper seasoning
  • 5-6 slices prosciutto
  • Spray oil
  • French or Italian dressing
  • Chives, to garnish

Cooking Instructions

  • Preheat grill pan or BBQ on medium heat. 
  • Coat prawns in lemon pepper seasoning.  Spray prawns lightly with spray oil and cook on BBQ grill plate for 2-3  minutes or until prawns are just cooked. 
  • Remove from heat and cook prosciutto 1 minute each side or until golden.  Remove from heat and when cool enough roughly  tear into pieces.
  • Toss salad mix, tomatoes, mango, avocado and prawns with salad dressing. Garnish with chives.
