Romatherapy® Baby Roma Tomato Asian Prawn Salad

Ingredients
- 500g (1 punnet) Romatherapy® baby roma tomatoes, quartered lengthways
- 5cm piece ginger, peeled, chopped
- 1 long red chilli, de-seeded, chopped
- 2 large eschallots, peeled, finely sliced
- 1 small bunch Thai basil, leaves picked
- 1 lime, cut into wedges
- 1 tbsp palm sugar
- 1 tbsp Thai fish sauce
- 400g pkt fresh rice noodles
- 250g peeled, de-veined cooked prawns, tails intact
Preparation Instructions
- Place ginger and chilli in a large mortar and pestle and pound until crushed. Add a handful of the tomatoes and pound until crushed. Add sugar and sauce and continue to pound until the mixture is smooth and well combined. Set dressing aside.
- Soak noodles in boiling water for 5 minutes until they separate easily. Drain well.
- Place the remaining tomatoes in a large bowl and add noodles, prawns, eschallots, basil and dressing. Toss well to combine.
- Serve with lime wedges.
