Simple Witlof Salad with Sherry Vinaigrette

Ingredients
- 4 witlof
- 3/4 cup walnuts, roughly chopped
- 100g gorgonzola, crumbled
Sherry Vinaigrette
- 1 tsp fresh thyme, finely chopped
- 1 golden shallot, minced
- 3 tbsp sherry vinegar
- 1 tbsp Dijon mustard
- 1/2 cup virgin olive oil
- Sea salt
- Freshly ground black pepper
Preparation Instructions
- Cut witlof in half lengthwise, remove core, separate inner leaves, wash, dry.
- Arrange leaves around a plate.
- Sprinkle walnuts over leaves.
- Use a teaspoon to place dollops of crumbled gorgonzola onto leaves, ensuring each leaf has about four dollops.
- Combine all vinaigrette ingredients in a small bowl and whisk.
- Drizzle vinaigrette generously over leaves, coating well.
- Finish with a sprinkle of freshly ground black pepper.
