Sweet Gems™ Baby Cos Hearts and Asparagus with Preserved Lemon Dressing
Gorgeous, healthy greens are the foundation for this delicate, health-giving dish.
Serves 4.
Prep Time: 10 minutes.
Ingredients
- 1 packet of 2 Sweet Gems™ baby cos hearts
- 1 bunch asparagus spears, cut into 5cm lengths
- 8 large green olives, sliced
- 1/4 cup toasted pinenuts
- Oregano leaves, to garnish
Dressing
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 1/4 preserved lemon, chopped
Cooking Instructions
- Wash, and separate lettuce leaves, roughly tear into smaller pieces.
- Blanch asparagus in boiling hot water for 2 minutes, refresh under some cold running water. To serve, combine the Sweet Gems™ baby cos hearts, asparagus spears, and olives into bowl.
- Combine all the ingredients for the dressing in a small bowl.
- Toss through salad, and top with pinenuts and oregano leaves.
