Sweet Gems™ Baby Cos Hearts with Lemon, Anchovy and Caper Dressing
Sweet Gems™ Baby Cos Hearts are irresistible in this healthy light lunch
Serves 4.
Prep Time: 10 minutes
Ingredients
- 1 packet (2 Sweet Gems™ baby cos hearts)
- 100g sliced prosciutto
- 1/2 cup shaved parmesan cheese
- 1 tbsp chopped chives
Dressing
- 1/2 cup whole egg mayonnaise
- 1 tsp wholegrain mustard
- 2 anchovies, chopped
- 1 tbsp caper, chopped
- 1 1/2 tbsp lemon juice
Cooking Instructions
- Wash and dry Sweet Gems™ baby cos hearts, and slice into quarters. Place onto serving plate.
- Grill prosciutto under a hot grill and cook for 2-3 minutes or until browned and crisp.
- Allow to cool, and break into pieces. Combine all the ingredients for the dressing.
- To serve, drizzle with dressing, top with prosciutto, parmesan, and sprinkle with chives.
