Sweet Gems™ Baby Cos Lettuce Hearts Caesar Salad
This is a new twist on an old favourite - always a great summer lunch.
Serves 4
Prep Time: 15 minutes.
Cooking Time: 15 minutes (for croutons).
Ingredients
- 4 Sweet Gems™ baby cos lettuce hearts
- 2-3 small garlic cloves, crushed
- 8 anchovy fillets
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 egg
- 2 cups croutons
- 4 slices bacon, grilled
- 1/2 cup grated parmesan
Cooking Instructions
- Wash and dry lettuce hearts. Trim and discard base.
- Place lettuce in large bowl, tearing into bite-size pieces if necessary.
- To make dressing, blend together garlic and anchovies. Add lemon juice then gradually add olive oil until dressing becomes creamy. Add lightly beaten egg.
- Toss lettuce gently with dressing and croutons.
- To make croutons, bake cubed white bread in a 180°C oven for 12-15 minutes or until golden.
- Add coarsely chopped bacon, cheese, cracked pepper to taste, and serve.
