Sweet Gems™ Baby Cos Lettuce Hearts Caesar Salad

 

This is a new twist on an old favourite - always a great summer lunch.

 

Serves 4
Prep Time: 15 minutes.
Cooking Time: 15 minutes (for croutons).

 

Ingredients

  • 4 Sweet Gems™ baby cos lettuce hearts
  • 2-3 small garlic cloves, crushed
  • 8 anchovy fillets
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 egg
  • 2 cups croutons
  • 4 slices bacon, grilled
  • 1/2 cup grated parmesan

Cooking Instructions

  • Wash and dry lettuce hearts. Trim and discard base.
  • Place lettuce in large bowl, tearing into bite-size pieces if necessary.
  • To make dressing, blend together garlic and anchovies. Add lemon juice then gradually add olive oil until dressing becomes creamy. Add lightly beaten egg.
  • Toss lettuce gently with dressing and croutons.
  • To make croutons, bake cubed white bread in a 180°C oven for 12-15 minutes or until golden.
  • Add coarsely chopped bacon, cheese, cracked pepper to taste, and serve.
