Sweet Gems™ Baby Cos Lettuce Hearts with Gorgonzola Cheese and Walnuts

 

Created especially for Perfection Fresh by celebrity cook, Stefano de Pieri, of the Mildura Grand Hotel's Stefano's Restaurant.

Ingredients

  • 4 Sweet Gems™ baby cos lettuce hearts, washed and trimmed
  • 12 The Original™ golden grape tomatoes, split in half
  • 120g Gorgonzola or Roquefort cheese, crumbled
  • 16 walnut kernels (optional)
  • Black pepper and salt, to taste
  • Grape seed or walnut oil*
  • A little white wine vinegar

Preparation Instructions

  • Toss all ingredients and adjust with oil and other condiments.

*Specialist shops stock a variety of oils and vinegars. Be sure to check use by dates.
