
Crimson POM Wonderful Jam and Cream Cheese Sandwiches
These fruity, star-shaped sandwiches are perfect for a kiddy party.
Makes 4 open-faced sandwiches.
Prep Time: 15 minutes.
Cooking Time: 2 hours, 20 minutes.
Ingredients
- Juice from 4-6 large POM Wonderful pomegranates*
- 1/4 cup arils from 1 large POM Wonderful pomegranate
- 1/4 cup arils from 1 large POM Wonderful pomegranate, for garnish
- 2 tbsp lemon juice
- 1 packet liquid fruit pectin, or 10g powdered fruit pectin
- 4 cups granulated sugar
- 4 slices whole wheat sandwich bread
- 8 tsp cream cheese
Cooking Instructions
Crimson POM Jam
- Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top.
- Sieve and put the arils in a separate bowl. Reserve 1⁄4 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)
- Prepare fresh pomegranate juice.*
- Combine pomegranate juice, lemon juice and pectin in a saucepan.
- Over high heat, bring mixture to a boil.
- Stir in sugar all at once, then stir constantly. Heat mixture again until it comes to a full rolling boil; boil 1 minute over medium-high heat.
- Remove from heat and skim foam from jam with a spoon.
- Discard foam. Immediately ladle the jam into clean jam jars with lids or refrigerator containers with tight-fitting lids.
- Sprinkle reserved arils over the top of each container of jam. Cover tightly.
- Let stand for 45 minutes to cool, then refrigerate for 1 1/4 hours. If not using immediately, refrigerate for up to 4 to 6 weeks or freeze for up to 1 year.
Sandwich
- Prepare garnish - score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top.
- Sieve and put the arils in a separate bowl. Reserve 4 tbsp of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)
- Place 4 slices of bread on a flat surface. Spread each slice of bread with 2 tbsp of cream cheese.
- Cover each cream cheese-coated slice of bread with 1 tbsp of Crimson POM Jam.
- Use a cookie cutter to make shaped sandwiches, if desired.
- Decorate each sandwich with 1 tbsp of arils.
*For 2 cups of juice, cut 4-6 large POM Wonderful pomegranates in half and juice them with a citrus reamer or juicer. Pour the mixture through a cheesecloth-lined strainer or sieve. Set the juice aside.
