Light Summer Sandwich Recipe

Light Summer Sandwich
Good looking and good for you … this sandwich is nourishing and delicious.
Serves 4.
Prep Time: 10 minutes.
Ingredients
- 1 x 200g punnet The Original™ grape tomatoes
- 1 Treviso™ radicchio
- 1/2 rockmelon
- Turkish bread
- 8 slices proscuitto
- Pesto
- Ground pepper and salt
Cooking Instructions
- Cut the Turkish bread into four, then cut each piece in half.
- Toast the Turkish bread.
- Spread pesto on the inside of each piece of the toasted Turkish bread.
- Wash and dry the radicchio leaves and spread them on the bottom half of the bread.
- Place two slices of proscuitto on the radicchio leaves for each sandwich.
- Peel the rockmelon and cut it into thin slices across the diameter of the half melon.
- Place the slices of rockmelon on the proscuitto.
- Wash and cut The Original™ grape tomatoes in half and spread over the rockmelon.
- Season the tomatoes with ground pepper and salt.
- Close the sandwiches with the top of the toasted Turkish bread.
