Light Summer Sandwich

Light Summer Sandwich

 

Good looking and good for you … this sandwich is nourishing and delicious. 

 

Serves 4.
Prep Time: 10 minutes.

 

Ingredients

  • 1 x 200g punnet The Original™ grape tomatoes
  • 1 Treviso™ radicchio
  • 1/2 rockmelon
  • Turkish bread
  • 8 slices proscuitto
  • Pesto
  • Ground pepper and salt

Cooking Instructions

  • Cut the Turkish bread into four, then cut each piece in half.
  • Toast the Turkish bread.
  • Spread pesto on the inside of each piece of the toasted Turkish bread.
  • Wash and dry the radicchio leaves and spread them on the bottom half of the bread.
  • Place two slices of proscuitto on the radicchio leaves for each sandwich.
  • Peel the rockmelon and cut it into thin slices across the diameter of the half melon.
  • Place the slices of rockmelon on the proscuitto.
  • Wash and cut The Original™ grape tomatoes in half and spread over the rockmelon.
  • Season the tomatoes with ground pepper and salt.
  • Close the sandwiches with the top of the toasted Turkish bread.
