Mediterranean Grape and Lamb Pitas
Juicy grapes marry well with tender lamb for a twist on a delicious Mediterranean-style sandwich. Thanks to California Table Grape Commission for a delightful recipe!

Ingredients
- 6 pieces pita bread
- 6 leaves of green leafy lettuce, washed and dried
- 450g cold, cooked lamb, thinly sliced
- 1 cup canned chick peas, rinsed
- 1 cup red or green seedless grapes
- 3/4 cup feta cheese, crumbed
- 1/3 cup red onions, diced
- 2 tbsp fresh mint, chopped
- 1/2 tsp oregano
- Salt to taste
- Pepper, freshly ground, to taste
Dressing
- 1 tsp garlic, freshly pressed or chopped
- 2 tbsp tahini
- 1 cup plain yogurt
- 1/4 tsp ground cumin
- Pinch salt
- Dash Tabasco sauce (optional)
Preparation Instructions
- Combine all ingredients for tahini dressing. Set aside.
- In a medium bowl, combine chick peas, grapes, feta, onions, mint, oregano, salt and pepper.
- Place a leaf of lettuce on top of each pita bread, followed by slices of cold lamb and a heaped spoonful of prepared salad mix.
- Top with tahini dressing.
- Press down on sandwich gently to distribute filling evenly, and fold over to form a sandwich.
