Sandwich Provençal Recipe

Sandwich Provençal
Turn your kitchen into a deli with this gorgeous continental snack.
Serves 4.

Ingredients
- 1 Sweet Gems™ baby cos lettuce heart
- 5 Saladette® truss tomatoes
- 12 slices grilled eggplant
- 2 baby red capsicums
- 1 baguette
- Butter
- 200g goat's cheese
- Pesto
- Ground black pepper
Preparation Instructions
- Cut the baguette into four, then cut the four pieces in half lengthways.
- Spread butter on each inside face. Spread pesto on top of the butter.
- Cover with the baby cos lettuce hearts.
- Slice the tomatoes and spread evenly on the salad.
- Place the slices of eggplant on top.
- Cut the baby capsicum in half, then in 3mm thick slices.
- Spread the baby capsicum on the eggplant.
- Cut the goat's cheese into 5mm thick slices.
- Spread the goat's cheese slices on the baby capsicum. Add freshly ground black pepper.
- Cover and serve.
