Enchanted® Apple Salsa with Mustard and Maple Marinated Pork Cutlets
A senstational sweet accompaniment for a delicious family meal.
Serves 4.
Prep Time: 15 minutes.
Cooking Time: 6-8 minutes.
Ingredients
Salsa
- 2 Enchanted® apples, skin on, diced
- 1 lime, zested and juiced
- 1/2 large red chilli, sliced
- 1/4 cup coriander, chopped
- 1 red capsicum, diced
- 2 tbsp roasted hazelnuts, roughly chopped
Cutlets
- 1 tbsp grainy mustard
- 2 tbsp maple syrup
- 1 tbs coriander, chopped
- 1 clove garlic, chopped
- 4 pork cutlets, trimmed
- Salad greens or freshly steamed vegetables, to serve
Cooking Instructions
- In a medium sized bowl, combine the mustard, maple syrup, coriander, and garlic.
- Toss pork cutlet in marinade to coat. Allow to marinate while making apple salsa.
- In another bowl, combine apples, lime zest, juice, chilli, coriander, capsicum, and hazelnuts. Keep aside.
- Heat a chargrill or non stick pan on medium heat. Spray with oil spray and cook pork cutlets for 3-4 minutes each side or until just cooked through. Brush with any remaining marinade while cooking.
- Serve apple salsa with the pork, with salad on the side, or freshly steamed vegetables.
