Pineapple Sauce for Glazed Ham
This delicious pineapple sauce is the perfect accompaniment for the Christmas ham.
Serves 6-8.
Prep Time: 25 minutes.
Cooking Time: 10-15 minutes.
Ingredients
- 1 Bethonga Gold pineapple, peeled and chopped
- 3 baby red capsicums, seeded and chopped
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 1 tbsp olive oil
- 3 tbsp brandy
- 375ml chicken stock
- 6 cloves
- 3/4 tsp nutmeg
- Salt and freshly ground black pepper
- 1 tsp butter
- 1 tbsp flour
Cooking Instructions
- Heat oil in saucepan over medium heat.
- Add onion, garlic and red capsicum. Fry for about 5 minutes, without browning.
- Add pineapple, brandy, chicken stock, cloves, nutmeg, salt and pepper.
- Simmer for about 5 minutes until pineapple softens slightly.
- Meanwhile, combine butter and flour, then whisk small pieces into sauce to thicken, adding only a small amount at a time.
- Serve as accompaniment to glazed ham.
