Pineapple Sauce for Glazed Ham

Pineapple Sauce for Glazed Ham

 

This delicious pineapple sauce is the perfect accompaniment for the Christmas ham.

 

Serves 6-8.
Prep Time: 25 minutes.
Cooking Time: 10-15 minutes.

 

Ingredients

  • 1 Bethonga Gold pineapple, peeled and chopped
  • 3 baby red capsicums, seeded and chopped
  • 1 large onion, chopped
  • 2 garlic cloves, crushed
  • 1 tbsp olive oil
  • 3 tbsp brandy
  • 375ml chicken stock
  • 6 cloves
  • 3/4 tsp nutmeg
  • Salt and freshly ground black pepper
  • 1 tsp butter
  • 1 tbsp flour

Cooking Instructions

  • Heat oil in saucepan over medium heat.
  • Add onion, garlic and red capsicum. Fry for about 5 minutes, without browning.
  • Add pineapple, brandy, chicken stock, cloves, nutmeg, salt and pepper.
  • Simmer for about 5 minutes until pineapple softens slightly.
  • Meanwhile, combine butter and flour, then whisk small pieces into sauce to thicken, adding only a small amount at a time.
  • Serve as accompaniment to glazed ham.
