Almond and Garlic Greens Recipe

Almond and Garlic Greens
A perfect baby vegie partnership.
Serves 4.
Prep Time: 5 minutes.
Cooking Time: 10 minutes.
Ingredients
- 300g punnet baby Brussels sprouts, halved
- 1 bunch Broccolini® baby broccoli, cut into 5cm lengths
- 2 garlic cloves, crushed
- 2 tbsp extra virgin olive oil
- 100g slivered almonds
- 1/2 lemon, juiced
- 2 tbsp finely chopped fresh parsley
- Salt and freshly ground black pepper
Cooking Instructions
- Microwave or steam the vegetables for 2 minutes or until just tender. Drain well. Set aside.
- Heat the oil in a large frying pan over medium heat. Add almonds and garlic and cook, stirring often, for 3 minutes or until almonds are golden.
- Add the greens to the pan and cook, tossing for 2 minutes or until heated through.
- Remove pan from heat and add the lemon juice, parsley, salt and pepper. Toss well to combine. Serve immediately.
