Braised Jerusalem Artichokes with Cream and Nutmeg
This rich, creamy recipe makes Jerusalem artichokes the perfect addition to the Sunday roast.
Serves 4.
Prep Time: 10 minutes.
Cooking Time: 20 minutes.
Ingredients
- 500g Jerusalem artichokes, scrubbed well, peeled if necessary, cut into 1cm diagonal slices
- 1 tbsp olive oil
- 1/2 cup cream
- 1/2 tsp nutmeg
- Salt and freshly ground black pepper
- Parmesan shavings, optional
Cooking Instructions
- Heat oil in large frying pan over medium heat.
- Add artichokes, reduce heat to low, cover pan and cook very slowly for 10-15 minutes, or until nearly cooked.
- Stir in cream and nutmeg and simmer covered, for 5 minutes, or until artichoke is cooked.
- Season with salt and pepper then serve, scattered over with parmesan according to taste.
