Chilli and Garlic Tuscan Cabbage (cavolo nero)

 

This aromatic addition to cabbage gives chargrilled beef and mashed potato a real zing!

 

Serves 4.
Prep Time: 5 minutes.
Cooking Time: 10 minutes.

 

Ingredients

  • 2 bunches Tuscan cabbage (cavolo nero), halved crossways
  • 4cm piece fresh ginger
  • 1 small fresh red chilli, seeds removed, finely chopped
  • 2 garlic cloves, crushed
  • 1 1/2 tbsp olive oil
  • 2 tbsp water
  • Salt and pepper

Cooking Instructions

  • Heat half the oil in a large wok or frying pan over high heat.
  • Add half the cabbage and cook, tossing, for 1-2 minutes or until Tuscan cabbage (cavolo nero) starts to wilt slightly.
  • Remove from the wok.
  • Heat the remaining oil and add the ginger, chilli, garlic and remaining cabbage.
  • Cook for 2 minutes or until cabbage starts to wilt.
  • Add all cabbage back to the wok with the water. Toss to combine.
  • Cover and cook for 2 minutes or until cabbage wilts.
  • Season well.
  • Serve with chargrilled beef and mashed potato.
