Confit Garlic and Saladette® Truss Tomatoes

 

Maximise the rich flavour of Saladette® truss tomatoes by adding sweet garlic in this delicious dish.

 

Serves 1.
Prep Time: 10 minutes.
Cooking Time: 25 minutes.

 

Ingredients

  • 2 garlic bulbs
  • 2 Saladette® truss tomatoes
  • 5ml extra virgin olive oil
  • 5ml reduced aged balsamic vinegar

Cooking Instructions

  • Preheat oven to 220°C.
  • Score and blanch Saladette® truss tomatoes.
  • Peel back skin without removing.
  • Cut garlic in half and wrap in pre-oiled aluminium sheets.
  • Roast for 25 minutes.
  • Once the garlic has roasted, pan fry in olive oil to give the garlic a nice colour. (This step is not essential.)
  • Assemble on grilled Turkish bread.
  • Drizzle plate with olive oil and balsamic vinegar.
  • Serve.
