Creamy Mash Recipe

Creamy Mash
Turn a basic mashed potato into a rich and creamy vegetable mash, just by adding some celeriac, pumpkin, or parsnip.
Serves 4.
Prep Time: 15 minutes.
Cooking Time: 15 minutes.
Ingredients
- Use either 1 celeriac or 450g pumpkin flesh or 450g parsnip
- 600g Lady Crystal potatoes, peeled
- 60ml (1/4 cup) cream
- Knob of butter
- 25g (1/4 cup) grated parmesan cheese (optional)
Cooking Instructions
- Peel all vegetables. Chop into large chunks.
- Cook potatoes in salted water until tender. At the same time, but in a separate pan, cook your other choice of vegetable until tender. Drain well.
- Heat the cream to just below boiling point. Set aside.
- Return the largest of the pans used to a very low heat.
- Add all the vegetables and the butter. Leave over the heat for about 30 seconds, shaking the pan to evaporate off any remaining cooking water.
- Remove from the heat. Mash well until creamy smooth.
- Stir in the hot cream. Season with salt and pepper.
- Stir in the parmesan cheese for an even richer mash.
