Glazed Apples and Carrots Recipe

Glazed Apples and Carrots
A delicious accompaniment to meat and fish.
Serves 4.
Prep Time: 15 minutes.
Cooking Time: 15 minutes.
Ingredients
- 2 bunches Dutch carrots, tops removed, scrubbed
- 3 Granny Smith or Golden Delicious apples, peeled, cored and cut into thickish wedges
- 2 tbsp butter
- 2 tbsp roughly chopped flat-leaf parsley
- Pinch nutmeg (optional)
Cooking Instructions
- Cook whole carrots in boiling, salted water for 5 minutes until just tender.
- Drain well. Pat dry on paper towel.
- Melt the butter in a wide frying pan over medium heat.
- Add the apples and sauté gently for about 8 minutes until golden and softened, turning occasionally, adding the carrots for the final 2 minutes.
- Sprinkle over the parsley and nutmeg, if using. Serve immediately.
