Parmesan Spears
This zesty approach to asparagus is perfect for side dishes and appetisers alike! For an added twist why not use green, purple and white asparagus?
Serves 4.
Prep Time: 5 minutes.
Cooking Time: 3 minutes.
Ingredients
- 2 bunches fresh asparagus spears, trimmed
- 2 tbsp extra virgin olive oil
- 2 tsp fresh lemon juice
- 1 tbsp lemon rind or zest
- 1/4 cup parmesan cheese shavings
- Cracked black pepper to season
Cooking Instructions
- Steam asparagus in an asparagus steamer or in a bamboo steamer over a wok of simmering water for 2 minutes, until bright in colour and just tender.
- Remove steamer from heat and drain asparagus.
- In a saucepan, over a low heat, warm oil, lemon juice and rind.
- Pour over asparagus and garnish with parmesan shavings.
- Season with cracked black pepper and serve immediately as an entrée or accompaniment to grilled meat or fish.
