Wilted Tuscan Cabbage (cavolo nero) Recipe

Wilted Tuscan Cabbage (cavolo nero)
Serve on toasted crusty bread as a wonderful accompaniment to your favourite Italian style meals.
Serves 4-5.
Prep Time: 15 minutes.
Cooking Time: 10 minutes.
Ingredients
- 4 x bunches Tuscan cabbage (cavolo nero)
- 2 garlic cloves, crushed
- 200g onion, diced
- 200ml chicken stock
- 50ml olive oil
- Sea salt and cracked pepper
Cooking Instructions
- Remove stalk from Tuscan cabbage (cavolo nero) leaves and chop roughly.
- In a pan, sauté (on low heat) onions and garlic until transparent.
- Increase heat, add cabbage and stir. Pour in chicken stock and place a lid on top to steam the cabbage.
- When tender add salt and pepper to taste.
