Wilted Tuscan Cabbage (cavolo nero)

 

Serve on toasted crusty bread as a wonderful accompaniment to your favourite Italian style meals.

 

Serves 4-5.
Prep Time: 15 minutes.
Cooking Time: 10 minutes.

 

Ingredients

  • 4 x bunches Tuscan cabbage (cavolo nero)
  • 2 garlic cloves, crushed
  • 200g onion, diced
  • 200ml chicken stock
  • 50ml olive oil
  • Sea salt and cracked pepper

Cooking Instructions

  • Remove stalk from Tuscan cabbage (cavolo nero) leaves and chop roughly.
  • In a pan, sauté (on low heat) onions and garlic until transparent.
  • Increase heat, add cabbage and stir. Pour in chicken stock and place a lid on top to steam the cabbage.
  • When tender add salt and pepper to taste.
