Broccoli and Royal Pom® Pomegranate Soup
Pomegranates add an expected twist to this healthy soup.
Serves: 4.

Ingredients
- 4 heads of broccoli, cut into small florets
- 2 large leeks, washed, roughly chopped
- 3 large potatoes, peeled, roughly chopped
- 1/2 cup Royal Pom® pomegranate arils
- 3 chicken stock cubes
- Boiling water
- 1 tsp nutmeg
- Pepper, to taste
- Chives, garnish
Cooking Instructions
- To remove pomegranate arils use a sharp knife, cut off the pomegranate crown, then cut the pomegranate into even sections. Immerse the sections in a bowl of cold water and gently roll out the arils with your fingers or a spoon. Discard everything else and strain the water.
- Place broccoli, leeks, potatoes and chicken stock cubes into a large saucepan. Cover with boiling water and simmer until tender.
- Using a blender, blend all ingredients together. Season with pepper and nutmeg.
- Ladle soup into serving bowls and top with pomegranate arils. Garnish with chives. Serve immediately.
