Broccoli and Royal Pom® Pomegranate Soup

 

Pomegranates add an expected twist to this healthy soup.

 

Serves: 4.
Prep Time: 15 minutes.
Cooking Time: 55 minutes.

 

Ingredients

  • 4 heads of broccoli, cut into small florets
  • 2 large leeks, washed, roughly chopped
  • 3 large potatoes, peeled, roughly chopped
  • 1/2 cup Royal Pom® pomegranate arils
  • 3 chicken stock cubes
  • Boiling water
  • 1 tsp nutmeg
  • Pepper, to taste
  • Chives, garnish

Cooking Instructions

  • To remove pomegranate arils use a sharp knife, cut off the pomegranate crown, then cut the pomegranate into even sections. Immerse the sections in a bowl of cold water and gently roll out the arils with your fingers or a spoon. Discard everything else and strain the water.
  • Place broccoli, leeks, potatoes and chicken stock cubes into a large saucepan. Cover with boiling water and simmer until tender.
  • Using a blender, blend all ingredients together. Season with pepper and nutmeg.
  • Ladle soup into serving bowls and top with pomegranate arils. Garnish with chives. Serve immediately.
