Place sliced chicken pieces into a non metallic bowl and combine with yoghurt and tapenade. If time permits, leave to marinate for a few hours for flavours to develop.
In a medium bowl, combine lettuce, Il Bello Rosso® baby red capsicums, carrot, Qukes® baby snacking cucumbers, grapes, and parsley.
To cook chicken, heat a BBQ grill or chargrill pan over medium heat.
Spray with oil spray and cook each side for 3-4 minutes or until chicken is cooked.
Gently mix chicken, salad and dressing, serve straight away.
