12 Qukes® baby cucumbers
to garnish Microherbs
1/3 cup tinned or fresh cooked beetroot finely diced
1 cup diced cooked chicken breast
1/4 cup firm ricotta cheese
1 tsp Italian parsley chopped
1 tsp lemon juice
1 tsp sea salt
1/2 tsp ground white pepper

For filling, place all ingredients except Qukes® and microherbs in a bowl and mix well.
Cut ends from Qukes® and cut in half on the diagonal. Use a short, fine bladed knife to hollow out the centres.
Fill the cavity with beetroot mix. Garnish with microherbs.
