SUmmer calypso® mango salsa
Yield: 3 cups
3 Calypso® Mangoes, diced
1 medium red or green capsicum, chopped
1/2 cup Mix-a-Mato® tomatoes, halved
1/4 cup red onion, chopped
1/4 cup coriander leaves, chopped
1 jalapeno pepper, seeded and chopped
1/4 cup lime juice
1/4 tsp salt, to taste
Combine mango, tomatoes, onion, coriander, onion, capsicum, and jalapeno pepper in a bowl
Add lime juice
Mix ingredients. Season with salt and allow salsa to rest
Calypso®Mango rice paper rolls
1 Calypso® mango
8 pieces of rice paper wrapper
1/4 cup Thai Basil leaves
1 Lebanese cucumber, cut into long strips
12 pieces, peeled, deveined, halved prawns
50grams vermicelli noodles
Nuoc Nam Dipping Sauce
2 tbsp lime juice
2 tbsp fish sauce
1 red chill, deseeded, chopped
1 clove garlic, minced
1 tbsp palm sugar
Peanut Dipping Sauce
1 tbsp peanut butter
2 tbsp hoisin sauce
1 tbsp white vinegar
1/4 cup milk or water
1 garlic minced
1/2 tsp hot sauce or sriracha sauce
Mix Nuoc Mam sauce ingredients together and set aside.
Mix Peanut sauce ingredients together in a microwave safe bowl. Microwave for 30 seconds and mix. Adjust with milk or water for desired thickness.
Place vermicelli noodles in a hot water for about 5 minutes (see package directions). Place in a colander or strainer and allow water to drain.
Peel and slice Calypso® Mangoes into long chunky strips.
Soak rice paper in a bowl with water for a few seconds.
Place it on a damp tea towel.
Assemble the basil and prawns on the centre of rice paper. Add Mango and cucumber strips.
Top it will noodles.
Fold the top of the rice paper, then the fold two sides towards the centre, then roll until seals neatly. Moist rice paper will naturally seal it.
Assemble on a plate and serve with two dipping sauces.
