Boost your immune system this summer with calypso® mangoes

But the best new year’s resolution would make mindful choices with your eating habits. Make conscious choices of purchasing and eating healthier. It begins by adding more fruits and vegetables into your diet. The food you eat fuels your body with vitamins and nutrients.

As we enjoy the outdoors and sunshine, summer is the best time to enjoy Calypso® mangoes. Apart from being sweet and delicious, they are also nutritious. Rich in vitamins, mineral, and antioxidants, vitamins boost our immune system. It boosts our immune system in the following ways:

  • It is high in Vitamin C
    One cup (165 grams) of mango provides 67% of the reference daily intake. Vitamin C is important for forming blood vessels and healthy collagen. Vitamin C helps our body heal. Vitamin C is a water-soluble vitamin that aids your immune system, assisting the body in absorbing iron and promoting grown and repair.

Vitamin C can help the body produce more disease fighting white blood cells, which help the cell work more effectively and improve the skin’s defences.

  • Mangoes are rich in Beta-carotene, the pigment responsible for the fruit’s yellow-orange colour. Beta-carotene is one of the many antioxidants found in mangoes. These antioxidants have been shown to fight free radicals, which damage cells.

  • Mangoes are high in antioxidants. It is packed with polyphenol, a plant compound that acts as an antioxidant inside the body. Mangoes have over a dozen different types of polyphenols including mangiferin. Antioxidants prevent free radical damage leading to aging and chronic diseases. Mangiferin is called a super-antioxidant, with studies finding it counters free radical damage linked to cancers, diabetes, and other illnesses.

  • Mangoes are a good source of immune boosting nutrients. One cup (165 grams) packs in 10% of the body’s daily vitamin A needs. Vitamin A is necessary in helping fight infections. Mangoes are rich in folate, vitamin K, vitamin E, vitamin B6 and B5, all aid the body’s immunity.

  • Mangoes are packed with folate, roughly 18% of the RDI. Folate is necessary for healthy cell division and DNA duplication.

  5. Make a delicious Calypso® mango salsa.

  6. Freeze pureed Calypso® mangoes. Add them to your favourite cocktails, juices, or sparkling water, as you keep hydrated during this scorching summer months.

  7. Top your oatmeal, cereal, or yogurt with slices of Calypso® mangoes.

  8. Try something new like Calypso® cooking Asian dishes using mangoes like Vietnamese Rice Paper Rolls or California Maki or even Mexican Mango Salsa. 

Calypso mango, ginger smoothie

SUmmer calypso® mango salsa

Yield: 3 cups 

Ingredients:

  • 3 Calypso® Mangoes, diced
  • 1 medium red or green capsicum, chopped
  • 1/2 cup Mix-a-Mato® tomatoes, halved
  • 1/4 cup red onion, chopped
  • 1/4 cup coriander leaves, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1/4 cup lime juice
  • 1/4 tsp salt, to taste

 

Method: 

  1. Combine mango, tomatoes, onion, coriander, onion, capsicum, and jalapeno pepper in a bowl

  2. Add lime juice

  3. Mix ingredients. Season with salt and allow salsa to rest

Calypso® Mango rice paper rolls

Serves 4

Ingredients:

  • 1 Calypso® mango
  • 8 pieces of rice paper wrapper
  • 1/4 cup Thai Basil leaves
  • 1 Lebanese cucumber, cut into long strips
  • 12 pieces, peeled, deveined, halved prawns 
  • 50grams vermicelli noodles 

Nuoc Nam Dipping Sauce 

  • 2 tbsp lime juice
  • 2 tbsp fish sauce 
  • 1 red chill, deseeded, chopped
  • 1 clove garlic, minced
  • 1 tbsp palm sugar 

Peanut Dipping Sauce

  • 1 tbsp peanut butter
  • 2 tbsp hoisin sauce
  • 1 tbsp white vinegar
  • 1/4 cup milk or water
  • 1 garlic minced
  • 1/2 tsp hot sauce or sriracha sauce 

 

Method:

  1. Mix Nuoc Mam sauce ingredients together and set aside.

  2. Mix Peanut sauce ingredients together in a microwave safe bowl. Microwave for 30 seconds and mix. Adjust with milk or water for desired thickness.  

  3. Place vermicelli noodles in a hot water for about 5 minutes (see package directions).  Place in a colander or strainer and allow water to drain.

  4. Peel and slice Calypso® Mangoes into long chunky strips.

  5. Soak rice paper in a bowl with water for a few seconds.

  6. Place it on a damp tea towel.

  7. Assemble the basil and prawns on the centre of rice paper. Add Mango and cucumber strips.

  8. Top it will noodles.

  9. Fold the top of the rice paper, then the fold two sides towards the centre, then roll until seals neatly. Moist rice paper will naturally seal it.

  10.  Assemble on a plate and serve with two dipping sauces.
