How to Build the Ultimate Healthy Grazing Platter

This adult grazing platter is the ultimate healthy snacking solution for any occasion, taking your entertaining game to a whole new level beyond the traditional charcuterie board. Not only are grazing platters a feast for the taste buds, but they also captivate the eyes, making them the perfect choice when you want to impress your guests!

INGREDIENTS

While it's possible to make some of these ingredients yourself to add a personal and homemade touch to your grazing platter, buying them is always an option if time is limited. However, if you have the time, it's highly recommended to make them fresh for the best flavour and quality!

HOMEMADE INGREDIENTS

Chilli lemon coconut salt

  • 2 tsp finely grated lemon rind
  • 2 tsp dried chilli flakes
  • 1/3 cup (20g) shredded coconut, lightly toasted
  • ¼ tsp raw sugar
  • ¼ cup (60g) sea salt flakes

Black sesame seaweed salt

  • 5g packet organic dried seaweed
  • 3 tsp mustard powder
  • 1 tsp raw sugar
  • ¼ cup (60g) sea salt flakes
  • 2 tsp black sesame seeds

Smokey paprika salt

  • 2 tsp finely grated lime rind
  • 1 tsp smoked paprika
  • 1 tsp chipotle spice blend
  • ½ tsp raw sugar
  • ¼ cup (60g) sea salt flakes

Protein Balls

  • ¾ cup (75g) traditional rolled oats
  • ¼ cup (38g) vanilla whey protein powder
  • 2 tbs (14g) shredded coconut
  • 1 tbs sesame seeds, toasted
  • ¼ cup (70g) peanut butter
  • 11/2 tbs (30g) honey
  • 1 tsp vanilla bean paste
  • ¼ cup (40g) dried fruit (like raisins, craisins or apple), chopped
  • 1 tbs (20ml) coconut milk

METHOD

Chilli lemon coconut salt

  1. Place the lemon rind onto a small baking tray lined with baking paper. Place into a 130°C fan forced oven for 15 minutes or until it feels dry. Set aside to cool.
  2. Place the rind, chilli flakes, coconut, sugar and half the salt into a small food processor. Pulse until well combined. Spoon into a bowl, stir in the remaining salt.
  3. Store in a clean, dry airtight jar for up for 6 months.

Black sesame seaweed salt

  1. Break the seaweed into smaller pieces and place in a small food processor. Pulse until finely chopped.
  2. Add the mustard, sugar and half the salt. Pulse until well combined. Spoon into a bowl, stir in the sesame seeds and remaining salt.
  3. Store in a clean, dry airtight jar for up for 6 months.

Smokey paprika salt

Protein Balls

  1. Combine the oats, protein powder, coconut and sesame seeds in a large bowl. Add the peanut butter, honey, and vanilla. Mix until well combined. Add the dried fruit (the mixture should be slightly sticky but still crumbly).
  2. Add the coconut milk and mix well (the mixture should hold together in a ball when you pick it up and squeeze together), add more coconut milk if necessary.
  3. Roll into balls using slightly damp hands. Refrigerate for 1 hour until firm. Place into a container and store in the fridge for up to 30 days.

Assembly

          1. Cut the Qukes® baby cucumbers in half, and sprinkle with prepared chilli lemon coconut salt, black sesame seaweed salt or smoky paprika salt. You can also substitute with your preferred flavour of seasoning salt. Place on a serving board.
          2. Top the rice cakes with mashed avocado, shaved ham, sliced Qukes® baby cucumbers and finely grated parmesan.

          3. Make a cottage cheese parfait by spooning ¾ cup (150g) cottage cheese into a jar, top with diced Qukes® baby cucumbers, Perfection Raspberries® and a drizzle of fresh passionfruit.
          4. Place hard-boiled eggs, with whole grain crackers and protein balls on a serving board.

          5. Place trail mix in a bowl and add baked pretzels along with your favourite fruits and vegetables.
          6. Serve and enjoy!
