Kumato® Recipes from Australia's Best Chefs

What are Kumato® Tomatoes

Kumato® is a unique variety of tomato that is extremely sweet and has a strong distinctive taste that changes as the tomato colour ripens from green to brown to dark red. Their darkly delicious flavour and versatility in different recipes and cooking techniques have made them a favourite for chefs across Australia. Here are some recipes featuring Kumato® tomatoes from a few of Australia's best chefs.

In partnership with Perfection Fresh Australia, chef Alex Prichard from Icebergs Dining Room and Bar shares two Italian inspired recipes featuring darkly delicious Kumato® tomatoes.

Chef Alex Prichard has taken a classic Italian snack, and put his own twist on it by pairing mozzarella cheese with sliced Kumato® tomatoes. Lemon leaves are added for a hint of freshness and citrus tang. Ready in less than 15 minutes, this snack is perfect for entertaining - be it a casual barbeque with friends, or a formal dinner party.

In this recipe, chef Alex Prichard has taken the classic Italian Pomodoro sauce to the next level by adding in our favourite Kumato® tomatoes. He's used these versatile tomatoes in two different preparations. First he's dried them (the recipe includes instructions for drying in the oven and the sun) to add pops of flavour throughout the rich buttery sauce, and then he's added fresh sliced Kumato® tomatoes in the end for an added burst of freshness.

Paul Farag’s Kumato® Salata

One of the things that sets Kumato® tomatoes apart from other tomatoes is that they are super versatile with different ideal usages at each stage. In this recipe, chef Paul Farag uses them when they are green. At this stage, they are green, flavourful and slice beautifully making them perfect for salads and sandwiches.

Chef Max Bean

In partnership with Perfection Fresh Australia, head chef Max Bean of Calla Pyrmont shares a recipe to create a café style breakfast recipe at home using Kumato® tomatoes. 

Italian-inspired avocado toast with fermented chilli and fresh ricotta

Chef Max Beans adds an Italian twist to the classic Australian avocado on toast using darkly delicious Kumato® tomatoes, along with fermented chili. Start off with making fresh ricotta (or get some from the supermarket), and then it's all about the layers. Sourdough, ricotta, then Kumato® tomatoes mixed with chili and avocado. Finally prosciutto, and fresh basil to garnish.

Chef Will Cowper's Panzanella Salad recipe is a light and refreshing recipe that's just right for the Australian summer. Enjoy it at an alfresco picnic in the garden, or at a casual dinner party with friends and family over. It features Kumato® tomatoes with crunchy and crispy focaccia and then stracciatella to bring it all together.
