- 4 stems (1/3 bunch) Broccolini®
- 3 Qukes® baby cucumbers
- 1 cup chilled coconut water
- 1 granny smith apple, quartered, cored
- 20g baby spinach
- 6 mint leaves
- Wash the Broccolini®, then place into a snap lock bag. Microwave for 60 seconds on High/100% power (see tip). Plunge into a bowl of iced cold water. Drain, roughly chop.
- Pour the coconut water into blender, then add Broccolini® and the remaining ingredients. Blend on high speed until smooth. Pour into glasses or jars and serve.
Tip- Blanching Broccolini® gives a brighter colour and sweeter flavour. Blanch a few bunches at a time and keep in the fridge all week to make daily smoothie.
Variations: Add a 2cm piece of peeled, freshly chopped ginger; or 2 tsp honey; 1 celery stick; 1 small banana
