Method
Place the raspberries the in a bowl. Sprinkle over the icing sugar. Crush with a fork. Stir in the orange juice. Cover and stand for 5 minutes. Spoon the mixture into a fine sieve over a bowl, pressing down on the raspberries to extract as much as possible, discard any solids in the sieve. Cover the puree and refrigerate until cold.
Cut the mango cheeks from the stones. Using a large spoon, remove the mango fruit from the cheeks and thickly slice the fruit.
Arrange the mango on chilled serving plates. Spoon over the raspberry sauce. Top with ice cream and scatter with extra raspberries. Serve with shortbread.
