Method

  1. STEP 1Thinly slice the Qukes® lengthways (a mandolin is the best way to do this). Combine the chicken and mayonnaise.
  2. STEP 2Prepare the noodles following the packet directions, refresh under cold water, drain well and return to bowl. Cut into shorter lengths using kitchen scissors.
  3. STEP 3Working with one rice paper sheet at a time, submerge it in a shallow dish of luke-warm water for 3 seconds (it should still be firm). Place on a board and pat dry with a paper towel to remove excess water. Place 4-5 Qukes® slices down the centre of the rice paper sheet.
  4. STEP 4Top with chicken, noodles, avocado, lettuce, and mint. Fold in the sides and roll-up firmly from the end closest to you, enclosing the filling. Repeat to make 12 rice paper rolls. Place into a lunch box with sweet chilli sauce and lunch box extras.
