Method

  1. STEP 1Preheat the oven 100°C fan forced.
  2. STEP 2Place the Mix-a-Mato® tomatoes in a bowl of cold water, toss gently to wash, then drain on paper towel, wiping them over so they are dry. Transfer the tomatoes to a baking dish so they fit ‘snugly’ in a single layer. Top with garlic, basil and bay leaves (if using). Season.
  3. STEP 3Whisk the oil, vinegar, salt and sugar together then pour over to completely cover the tomatoes, adding more oil if necessary (this will depend on the size of dish used).
  4. STEP 4Cook slowly for 1-1¼ hours until the tomatoes start to wrinkle but do not burst (a few of the skins may split on standing). Remove from the oven and set aside to cool to room temperature in the oil. Enjoy immediately or spoon into jars with the oil, cover and keep in the fridge for up to 3 months.

Serving Suggestions:

  • Chargrill sourdough, spread with fresh ricotta, mascarpone or labneh. Top with Confit Mix-a-Mato® tomatoes and fresh basil.
  • Spoon the Confit Mix-a-Mato® tomatoes and enough oil into a frying pan and warm over medium heat. Spoon over cooked pasta or gnocchi. Finish with freshly grated parmesan or pecorino.
  • Spoon Confit Mix-a-Mato® tomatoes over freshly torn buffalo mozzarella, drizzle with caramelized balsamic, finish with olives and toasted pistachio. Serve with baguette.
  • Serve Confit Mix-a-Mato® tomatoes over roast beef, chicken or fish.
  • Use Confit Mix-a-Mato® tomatoes on pizzas, burgers or toasties.
Tips TipThe oil can and be re-used for dressings, marinades and cooking. As it contains juices from the tomatoes, pour into a clean jar and keep in the fridge (it will go cloudy but will become clear again at room temperature). Use within 3 months.
