200g Qukes® baby snacking cucumbers, thickly sliced
1/2 cup loosely packed mint leaves
150g Greek fetta
2 tbs raspberry or sherry vinegar
2 tbs extra virgin olive oil

2 tsp Dijon mustard
2 tsp maple syrup

Method
Remove the rind from the watermelon and cut into 2½ cm cubes. Place into a large serving bowl.
Add the
Qukes®
and mint. Stir gently to combine. Crumble the fetta over the salad.
Whisk the vinegar and oil together until well combined, season with pepper and spoon over the salad just before serving.
