3 DELICIOUS TOMATO RECIPES TO MAKE AT HOME

From a slow-roasted sauce to a saucy one-pan shakshuka and the ultimate toasted sandwich, here are three recipes where tomatoes take centre stage.

ROASTED PERFECTION TOMATO SAUCE

A sauce so good, it becomes the heart of every dish. Slow-roasted Perfection tomatoes melt into rich, velvety flavour — perfect for pasta, pizza, or dipping bread straight from the oven.

Ingredients

  • 1.5kg Perfection tomatoes*, halved
  • 3 garlic cloves, sliced
  • Fresh basil
  • Salt & pepper
  • 2 tbsp olive oil
  • 2 tbsp Sherry vinegar
  • Large pasta shells, cooked & drained
  • Finely grated parmesan
  • Basil leaves to serve

*we've used Kumato®, truss, Mix-a-Mato® and Romatherapy® baby roma tomatoes - together their natural sweetness & rich flavour depth create the perfect base for sauce.

Method

  • Preheat oven to 200°C. 
  • Place tomatoes into a roasting pan, 2-3 layers deep
  • Top with garlic & basil, season with salt & pepper
  • Add olive oil & sherry vinegar
  • Roast for 20 minutes or until tomatoes are soft and saucy

Serving Suggestion

  • Arrange hot cooked pasta into a large serving dish
  • Spoon over the roasted tomato sauce
  • Drizzle with olive oil and top with a handful of parmesan and basil
  • Serve!

SHAKSHUKA

There’s nothing better than shakshuka — eggs gently poached in a rich, spiced tomato sauce, bubbling away in one pan. It’s hearty enough for dinner, light enough for brunch, and made even better with the flavour and juiciness of Perfection tomatoes.

Ingredients

  • 1 tbsp olive oil
  • 1 red onion, halved, thinly sliced
  • 175g Minicaps®, baby capsicums chopped
  • 1 tsp smoked paprika
  • 1 tbsp tomato paste
  • 700g Perfection tomatoes* chop any large tomatoes and leave small tomatoes whole
  • 1/2 cup water
  • 4–6 eggs
  • Flat leaf parsley leaves
  • Crumbled feta cheese to serve
  • Chargrilled sourdough to serve

*we've used Kumato®, truss, Mix-a-Mato® and Romatherapy® baby roma tomatoes - keep the smaller tomatoes whole for a juicy burst. Mix-a-Mato® adds a pop of colour to this warming dish.

Method

  • Heat oil in a large non-stick frying pan over medium heat
  • Cook onion and Minicaps®, stirring for 5 minutes or until tender
  • Add paprika and tomato paste and cook, stirring for 1 minute
  • Add tomatoes and water and bring to a simmer. Cook, uncovered for 10 minutes or until mixture thickens slightly
  • Season with pepper
  • Using the back of a wooden spoon, make 4 small evenly spaced indentations in the tomato mixture.
  • Carefully crack an egg into each indentation and cook, covered for 5 minutes or until egg whites are cooked through and yolks are still soft.
  • Sprinkle with parsley and serve

PERFECTION TOMATO & MOZZARELLA SANDWICH 

A toasted sandwich stacked with layers of juicy tomatoes, creamy mozzarella, and a little green crunch. Simple, satisfying, and always elevated when it starts with Perfection tomatoes.

Ingredients

  • 2 Monterosa® tomatoes sliced
  • 2 Kumato® tomatoes sliced
  • Extra virgin olive oil
  • 1 tsp sumac
  • 4 large slices of sourdough
  • 2 tbsp whole egg mayonnaise
  • Handful of baby spinach
  • Handful of rocket
  • 1 ball mozzarella, thinly sliced
  • Sea salt & cracked black pepper

Method

  • Place the sliced tomatoes onto a tray, drizzle with olive oil and season with salt & pepper and a sprinkle of sumac
  • Place 2 slices of bread onto a board and spread both with mayonnaise
  • Top one slice with spinach, another with rocket.
  • Arrange Monterosa® slices over spinach, Kumato® slices over rocket and top both with with sliced mozzarella
  • Sandwich with the remaining bread slices and spray with oil
  • Cook in a sandwich press until golden or fry in a large frying pan lined with backing paper until golder brown
  • Cut and serve
