ROASTED SOLANATO® TOMATO GUACAMOLE

  • 250g Qukes® baby cucumbers
  • 200g Sweet Solanato® Tomatoes
  • 1 tbs olive oil
  • 200g guacamole dip

Method

  1. Cut 8 tomatoes in half, reserve the remainder for another use. Scatter halved tomatoes in a small roasting pan, drizzle with olive oil and season. Roast in a 200°C fan forced oven for 5 minutes until soft. Cool. Stir tomatoes and juices into the guacamole. Serve with Qukes® for dipping.
