ROASTED SOLANATO® TOMATO GUACAMOLE

Ingredients
- 250g Qukes® baby cucumbers
- 200g Sweet Solanato® Tomatoes
- 1 tbs olive oil
- 200g guacamole dip
Method
- Cut 8 tomatoes in half, reserve the remainder for another use. Scatter halved tomatoes in a small roasting pan, drizzle with olive oil and season. Roast in a 200°C fan forced oven for 5 minutes until soft. Cool. Stir tomatoes and juices into the guacamole. Serve with Qukes® for dipping.
