1 garlic clove (crushed)
1 long green chilli (finely chopped)
1 tsp smoked paprika
800g piece skirt steak (trimmed)
12 tortillas (warmed)
Coleslaw or shredded lettuce (to serve)
¼ cup (60ml) chipotle mayonnaise (to serve)
Guacamole (to serve)
1 lime (quartered)

500g Cauli-Blossom

Olive oil cooking spray
2 tbs Mexican spice blend (or taco seasoning)

Method

Combine the oil, garlic, chilli and paprika. Rub over both sides of the steak then cover and refrigerate for 1 hour if time allows.
Preheat a barbecue plate or grill on high, reduce heat to medium-high and add the steak, barbecue for 6-8 minutes each side (medium). Transfer to a plate, cover loosely with foil and set aside for 20 minutes to rest (resting time is vital when cooking skirt steak). Combine the coleslaw or lettuce and mayonnaise.
Meanwhile, place the Cauli Blossom® onto a tray and lightly spray with oil. Sprinkle with the spice blend, turning to coat all over. Place the Cauli Blossom® in the air fryer basket in a single layer.
Cook in batches on 180°C for 8-10 minutes, turning every 4 minutes. Alternatively, cook all together on 200°C for 15 minutes (see tip).
Thinly slice the beef across the grain. Spoon the guacamole over the tortillas. Top with coleslaw or lettuce, beef and Cauli Blossom®. Serve with lime.
