Place the freekeh and 2 cups (500ml) water in a medium saucepan. Bring to the boil over high heat. Reduce the heat to low. Simmer, covered, stirring occasionally, for 20 minutes or until tender. Drain. Refresh under cold running water. Drain well.
Use a julienne peeler to shred the zucchini into long zoodles. It’s also possible to use a spiralizer if available. Place into a colander over a large bowl. Sprinkle with 1 teaspoon of crushed sea salt flakes and allow to stand for 20 minutes, this draws out the excess moisture.
Blanch or microwave the Broccolini® until bright green and tender. Refresh in cold water.
Combine all the dressing ingredients in a bowl, season and whisk until well combined. Spoon the dressing between two, 3 cup (750ml) capacity jars.
Stand the Broccolini® stems upright in each jar. Add the tomatoes, freekeh, zoodles, Minicaps®, Qukes®, bocconcini, olives and herbs or leaves. Secure the lid and place in the fridge until you’re ready to serve.
TipFreekeh or farik, is a nutritious high protein whole grain, found in the health food section of the supermarket. You can replace it with Bulgur, brown rice or rice and quinoa blend.
