Cut the tomatoes into threes crossways. Combine all the dressing ingredients with salt and pepper in a bowl and whisk until well combined.
Spoon 30ml (1½ tablespoons) of the dressing into the base of each jar. Divide the tomatoes, cucumbers, carrots, radishs and snow peas into six portions and layer them into the jars. Top each with rocket and 3 teaspoons of toasted seed mix.
Season with salt and pepper then secure the lid. Keep in the fridge for up to 6 hours.
To serve; remove lid and palce each salad onto serving plates. The dressing in the base of the jar will run over the salad ingredients to coat them.
