Vanilla tabasco vinaigrette

Method

  1. STEP 1Wash and dry the tomatoes. Slice and arrange on a large board or platter. Season with salt and freshly ground black pepper. Tear the mozzarella into pieces and arrange over the tomatoes.

 

  1. STEP 2For the vanilla tabasco vinaigrette, scrape the vanilla seeds from the vanilla bean. Place the seeds in a bowl (see tip below for the vanilla pod). Add the oil, vinegar, tabasco, and sugar, Whisk until well combined. Season with salt and pepper. Taste adding more tabasco or sugar as required.

 

  1. STEP 3Spoon the dressing over the cheese and tomatoes. Top with basil leaves and serve with chargrilled focaccia.
Tips TipPlace the vanilla pods into a jar of caster sugar to make your own vanilla sugar.
