2 buffalo mozzarellas, drained
1 cup basil leaves
Focaccia, cut into pieces and chargrilled, to serve

Vanilla tabasco vinaigrette

1 vanilla bean, split lengthways
1/3 cup (80ml) extra virgin olive oil
1½ tbs (30ml) raspberry or chardonnay vinegar
4 drops tabasco
½ tsp caster sugar

Method

Wash and dry the tomatoes. Slice and arrange on a large board or platter. Season with salt and freshly ground black pepper. Tear the mozzarella into pieces and arrange over the tomatoes.

For the vanilla tabasco vinaigrette, scrape the vanilla seeds from the vanilla bean. Place the seeds in a bowl (see tip below for the vanilla pod). Add the oil, vinegar, tabasco, and sugar, Whisk until well combined. Season with salt and pepper. Taste adding more tabasco or sugar as required.

Spoon the dressing over the cheese and tomatoes. Top with basil leaves and serve with chargrilled focaccia.
