Cut the mango cheeks from the stones. Using a large spoon, remove the mango fruit from the cheeks and thinly slice the mango crossways. Place into a large bowl. Add the bean sprouts, green onions, coriander, basil, chilli and peanuts. Toss gently to combine.
Combine all the dressing ingredients in a jug, whisk well. Just before serving, spoon the dressing over the salad. Sprinkle with fried shallots and serve.
TipThis is a great salad served with barbecue chicken, fish, salmon, or pork. Or simply add shredded chicken, cooked tofu or prawns to turn into a great summer main.
