Cajun Battered Grape Tomatoes

Ingredients
- 20 Grape Tomatoes
- 20 x 18cm wooden skewers
- 1/2 cup plain flour
- 1 ltr vegetable oil
Cajun spices
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp cayenne pepper
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1 tsp ground black pepper
- 1/2 tsp salt
BAtter
- 75g plain flour
- 15g dried yeast
- 1 tsp Cajun spices
- 1/2 tsp caster sugar
- 1/4 tsp salt, pinch
- 30 ml bourbon
- 100 ml soda water
Method
- For Cajun spices, combine all ingredients.
- For batter, combine flour, yeast, spices, sugar, salt and bourbon and mix well. Add soda water and whisk briefly. Allow to stand in a warm spot for 2 hours. Batter should foam and be well risen.
- Heat vegetable oil in a saucepan until hot.
- Place grape tomatoes on the end of the skewers, dust in flour then dip in batter. Drain well.
- Immerse tomato in hot oil until golden, drain on paper towel and roll in remaining Cajun spices.
