Layered Gourmet Tomato Salad
- 2 punnets Mix-a-mato® tomatoes, larger tomatoes to be halved
- 2 Kumato® Tomatoes, thinly sliced
- 1 punnet Romatherapy® Baby Roma Tomatoes, halved lengthwise
- 1 large avocado, chopped
- 1 bunch basil, leaves removed
- 3 tbs extra virgin olive oil
- 3 tbs basil pesto
- 200g bocconcini, drained, halved
- pecorino, finely grated, optional
- In a large glass bowl, layer half the Mix-a-mato® tomatoes in the base. Top with avocado and scatter over handful basil. Season with salt and pepper and drizzle over 1 tablespoon oil.
- Spoon pesto over the Mix-a-mato® tomatoes. Top with baby roma tomatoes, bocconcini and handful basil leaves. Season and drizzle with 1 tablespoon oil. Top with Kumatoe® tomatoes and remaining Mix-a-mato® tomatoes. Season and drizzle with remaining oil. Cover and refrigerate 1 hour to allow flavours to develop.
- Just before serving scatter over few small basil leaves and pecorino.
