PERFECTION RASPBERRY AND DATE CACAO BALLS

- 125g Perfection Raspberries
- 15 Medjool dates, pitted, chopped
- ½ cup natural almonds
- ½ cup roasted cashew nuts
- ½ cup desiccated coconut
- 2 tbs cacao powder
- 30g coconut oil, melted, cooled
- Place the dates, almonds, cashews, coconut and cacao in a food processor. Pulse until finely chopped. Add raspberries and coconut oil, pulse until the mixture almost comes together. Transfer to a bowl, refrigerate 1 hour.
- Roll tablespoons of the mixture into balls. Roll in extra cacao, coconut or finely chopped cashews to coat. Serve chilled.
