  • 125g Perfection Raspberries
  • 15 Medjool dates, pitted, chopped
  • ½ cup natural almonds
  • ½ cup roasted cashew nuts
  • ½ cup desiccated coconut
  • 2 tbs cacao powder
  • 30g coconut oil, melted, cooled

Method

  1. Place the dates, almonds, cashews, coconut and cacao in a food processor. Pulse until finely chopped. Add raspberries and coconut oil, pulse until the mixture almost comes together. Transfer to a bowl, refrigerate 1 hour.
  2. Roll tablespoons of the mixture into balls. Roll in extra cacao, coconut or finely chopped cashews to coat. Serve chilled.
  Note- Fresh raspberry date & cacao balls will keep up to 7 days in an airtight container in the fridge.
