Pomegranate Poached Pears

Ingredients
- 1 Pomegranates
- 1 cup pomegranate molasses
- 4 bosc pears
- 1/2 mandarin, peeled, seeded
- 1/2 lemon, peeled, seeded
- 2 lime leaves
- 1 vanilla pod
- 1 knob ginger
- 2 star anise, pieces
- 1 cassia bark, piece
- 500 grams sugar
- 2 shots campari
- 1 1/2 ltr water
Method
- Peel the pears then combine all the ingredients (except the pomegranate seeds) in a pot and bring to the boil.
- Simmer gently for 10 minutes or until just tender.
- Remove from heat and cool.
- To prepare sauce, reduce some of the poaching liquor until it just coats the back of the spoon.
- Throw in the seeds, coat the pears and serve.
