QUKES® BABY CUCUMBERS AND ROASTED CAULIFLOWER HOMMUS

Ingredients
- 250G Qukes® baby cucumbers
- 1/2 small (300g) cauliflower, chopped
- 1 tbs olive oil
- 1 tsp mild curry powder
- 200g hommus
- Toasted pepitas
Method
- Scatter cauliflower in a small roasting pan. Drizzle with olive oil and sprinkle with curry powder. Roast in a 200°C fan forced oven for 12 minutes until tender. Cool. Pulse the cauliflower and hommus together in a food processor to desired consistency. Sprinkle with pepitas. Serve with Qukes® for dipping.
