Sweet Solanato®, Qukes®, Radish & rocket salad jars

  • 2 x 200g Sweet Solanato® Tomatoes
  • 6 Qukes® baby cucumbers
  • 2 large carrots, coarsely grated
  • 1 bunch radish, washed, thinly sliced
  • 150g snow peas, topped, shredded
  • 60g baby rocket leaves
  • 1/4 cup seed mix, toasted


  • 1/2 cup extra virgin olive oil
  • 3 tbs red wine vinehar
  • 3 tsp dijon mustard
  • 1/4 cup seed mix, toasted
  • 3 tps honey


    1. Cut the tomatoes into threes crossways. Combine all the dressing ingredients with salt and pepper in a bowl and whisk until well combined.
    2. Spoon 30ml (1½ tablespoons) of the dressing into the base of each jar. Divide the tomatoes, cucumbers, carrots, radishs and snow peas into six portions and layer them into the jars. Top each with rocket and 3 teaspoons of toasted seed mix.
    3. Season with salt and pepper then secure the lid. Keep in the fridge for up to 6 hours.
    4. To serve; remove lid and palce each salad onto serving plates. The dressing in the base of the jar will run over the salad ingredients to coat them.

Tip- If you don’t want to package this salad into jars, simple whisk all the dressing ingredients in a large bowl. Add the tomatoes and allow to stand 10 minutes. Then add all the other ingredients, toss to coat and serve immediately.

Note- This Recipe makes 6 x 500ml jars
