Cut the Qukes® baby cucumbers in half and place in a bowl.
For the dressing, combine the chilli oil, rice vinegar and sugar. Stir until the sugar is dissolved. Pour over the Qukes® baby cucumbers and stir gently to coat. Stand for 15 minutes.
Meanwhile, cut the green onions into matchsticks and place in a bowl of iced water. Place in the freezer for 10 minutes (this makes them curl) then drain well.
To serve, spoon the Qukes and chilli oil dressing onto a serving plate. Top with ginger, green onions and sesame seeds. Drizzle with sesame oil and serve with pot stickers, dumplings, spring rolls or steamed bao buns.
