Method

  • Preheat the oven to 160°C fan forced. Line a large baking tray with baking paper.
  • Combine 1 cup coarsely mashed banana, the almond meal, cinnamon and rice malt syrup in a bowl. Stir gently until just combined (the mixture will be sticky).
  • Using a heaped tablespoon of mixture, roll into a ball then roll in the oats, flaked coconut or raw sugar to coat. Place onto the baking tray and flatten to 5cm cookie. Repeat to make 20 cookies.
  • Dust the cookies with icing sugar. Bake for 25 minutes or until light golden and firm to touch. Allow to cool completely on the tray.
Tips TipTip: You can also roll the banana cookies in flaked almonds or chopped pistachios. Store the cookies in an airtight jar for up 4 days.
