Method

  1. STEP 1Thinly slice the beef fillet, place into a bowl. Add 1 tbs oil, 3 tablespoons mango chilli jam and 1 tablespoon oyster sauce or ketcup manis, stir to coat.
  2. STEP 2Heat wok over high heat. Cook the beef in batches, 1 minute until seared. Remove to a plate. Add 1 bunch Broccolini, cut into 3 crossways, stir fry 30 seconds. Add 1 tablespoon water, cover and cook broccolini 30 seconds until bright green.
  3. STEP 3Return the beef, 1-2 tablespoons extra mango chilli jam and 2 tbs ketcap manis stir fry until well combined. Add a handful of salted roasted cashews. Serve over cooked jasmine rice. Serves 4
