Method

  1. STEP 1Invert base of a 23cm springform cake pan. Grease and line base with baking paper.
  2. STEP 2Process biscuits in a food processor until finely crushed. Add the butter, mix well. Press over the base and three-quarters of the way up the side of the pan. Refrigerate for 30 minutes until firm. Preheat oven to 160°C fan forced.
  3. STEP 3For the filling; Place cream cheese and sugar in food processor bowl. Process until smooth. Add flour, pulse to combine. Add eggs and egg yolks, pulse until combined. Remove to a bowl. Fold in sour cream and blueberries.
  4. STEP 4Spoon into prepared pan. Smooth the top. Place onto a flat oven tray. Bake for about 1 hour or until just set in the centre when tested with a skewer. Turn off the oven. Cool in the oven with door ajar for 2 hours. Refrigerate for 6 hours, or overnight until chilled.
  5. STEP 5Remove the cheesecake to a serving plate. Scatter over the blueberries. Drizzle with caramel spread. Cut into wedges to serve.

 

Tips TipIf you don’t have a food processor, you can use an electric whisk/ beater
